Chicken legs, wings and thighs are fantastic roasted in the oven. They have so much fat content that it's hard to overcook them. You don't have to worry about the meat drying out.
Ingredients
4 to 5 lbs chicken parts (I prefer legs or thighs)
3 tbsp olive oil
1/4 cup Creole or Cajun seasoning (I used Tony Chachere Original Creole Seasoning)
Ranch dressing (optional)
Instructions
Preheat oven to 400°F. Rub chicken with oil to coat. Add the seasoning and toss to thoroughly coat chicken. Place the chicken on cookie sheets about an inch apart. Bake for 50 minutes or until skin is golden and crispy and any juices run clear. Serve with ranch dressing if desired.
